Black Rice

What is black rice?

  • Black rice can refer to more than 20 varieties of Oryza sativa rice (Asian Rice) high in anthocyanin pigment, the same pigment that is present in dark red, blue and purple fruits such as blackberries, blueberries and cherries.
  • Black rice is almost always sold as a whole grain, with the outermost layer of bran intact.
  • The uncooked grains are black, while cooked or soaked grains turn purple – it’s a result of dark bran mixing with white endosperm.
  • It’s true rice – an heirloom rice variety that gets its colour from the same type of mutation that affects red rice.

How does it taste?

Black rice has got a slightly nutty flavour paired with a sticky texture. It’s quite dense and chewy.

How to use?

Cooking Directions:

  • 21/4 cup water
  • 1 cup of black rice, rinsed
  • 1/8 tsp of salt (or to taste)

The Method:

  • Pre-soak the black rice in water for 2 hours
  • Add some salt to the rice
  • Add water in the cooker and place the pre-soaked rice vessel in the cooker
  • Shut the lid add the whistle and let it cook for 20 mins
  • Let it stand covered for ~5 -10 mins
  • Fluff with a fork and serve
